    coo#ed and eaten.A $ositive result of tese canges &as te *uic# food tecnology, te &ay

    $roducts are $re$ared and $ac#ed in order to offer safety and good *uality of te food su$$ly.

    Ges$ite of tese ne& findings, tis may cause food contamination by some natural ingredients or

    by introducing tem by accident or by te im$ro$er andling of food ?(adulescu and Jon, 446C.

    According to te Euro$ean Knion and te rgani0ation food safety is

    everyoneLs res$onsibility from teir origin until tey reac te table. )n order to assure te food

    *uality and safety some $rocedures are needed in order ma#e sure tat $roducts are untouced

    and monitoring $rocedures so as to end all te activities in good conditions.

    %erefore food $olicy must be built around around some ig food safety standards &ic

    sould contribute to consumer and animalsL ealt $rotection and around some standards

    concerning te environmental $rotection.

    o&adays te life standards as led to te food tecnology $rogress, im$osed canges in te

    storage, $re$aration and consum$tion of food. Fast develo$ments &itin a com$etitive climate

    doubled by te consumerLs e9$ectances and demands ave $romoted a food oversu$$ly

    causing at te same time a ue ris# of illness due to consum$tion of contaminated food or an

    inade*uate treatment of tem. According to te global statistics N of te diseases caused by

    contaminated food are due to restaurants and service units, 5N due to ouseold sector and

    ON due to food $roducers.
