ABSTRACT
In this paper, we tried to highlight consumers’ behaviour towards irradiation of food
products. Nowadays, there are certain contradictions regarding the beneficial effects of food
irradiation and the risks that consumers face. Thus, on one hand, irradiation contributes to an
increase in shelf-life of perishable products and to the inactivation of pathogen
microorganisms. On the other hand, the treatment reduces the content of nutrients, such as
vitamins, and can generate toxic compounds such as 2 alkylcyclobutane. This contradiction
generates a response from the average consumer which desires food safety and quality. As a
result of the bibliographic study, we concluded that consumers wish to be directly informed
by the food product, through labelling, of the presence or absence of irradiated ingredients.
Also, there is a need to explain and promote the notion of food irradiation in order to allow
the consumer to knowingly chose between taste and cost, health and risk.
