COLECŢIA OBIECTE DE UZ GOSPODĂRESC

„Chestiunea gastronomică este de ordin estetic şi filozofic. Bucătăria

ţine de artele frumoase, de practicile culinare ale unei civilizaţii şi ale unei

epoci. Ea exprimă o epocă la fel ca un tablou, o sonată, un monument, o piesă

de teatru sau o lucrare de arhitectură.” (Michel Onfray)

Împreună cu obiceiurile alimentare, cotidiene ori de sărbătoare, obiectele de uz

gospodăresc alimentar tălmăcesc modul de viaţă al unei comunităţi (în timp fiecare epocă a

adus elemente noi), devin o marcă de identitate culturală.

Muzeul Agriculturii deţine o colecţie de obiecte de uz culinar, produse de manufactură

ori realizate industrial, provenind din diverse medii sociale şi cu diverse funcţionalităţi în

procesul de preparare şi de servire a hranei: vase de lemn (covată de frământat aluatul, cofe

pentru apă sau aghiasmă, vase pentru transport ş.a.), vase de ceramică (oale pentru sarmale,

străchini, urcioare), vase de aramă (tigăi, căldări, ghiumuri, ibrice, ligheane, vase pentru

bragă), vase de metal emailate şi neemailate (ceainice, cratiţe, strecurători), de porţelan

(farfurii, căni, ceşcuţe), de sticlă (pahare, sticle, farfurii), piuliţe cu pisălog din alamă sau din

fontă, maşini de râşnit biscuiţi ori mieji de nucă: (Duplex, Venus, Porkert Made in

Czechoslovakia, Astoria, Harras Germany, Non Plus Ultra F&R.F, Silwed Baby ), maşini de

măcinat porumb (Moravia Made in Czechoslovakia, Perfection Paris, Standard Werk

Bolinder’s Sweden, Ideal Bolinder’s Stocholm), maşini de râşnit piper, zahăr (Aroma,

Flacăra), maşini de tocat carne (Vlăhiţa, Super, Husqvarna, Reliance Made in Sweden),

fructe, maşină pentru frământat brânză, aparat pentru bătut untul, aparat pentru preparat

îngheţată Reliance Husqvarna Sweden, maşină pentru pesmet, cântare de bucătărie ş.a.

De asemenea, maşini şi instalaţii pentru preparat hrana: ţest, cuptoraşe din tablă,

maşini de gătit (Vesta, Primus, Petro l- Globus), aragaz Vlăhiţa, plite electrice.

Colecţia este completată de câteva cărţi de bucate monografice, scrise în prima

jumătate a veacului al XIX- lea de mari doamne, profesoare de menaj cu studii în toată

Europa (ex. „Carte de bucate pentru buna menajeră” a doamnei Ecaterina Dr. S. Comşa,

absolventă a Institutului de menaj „Dament-Stift” din Viena), precum şi publicaţii mai noi

(ex. seria „Poveştile bucătăriei româneşti” de Radu Anton Roman ş.a.).

THE COLLECTION OF HOUSEHOLD ITEMS

„The gastronomy question is a question of aesthetics and philosophy:

the cuisine belongs to the fine arts, to the culinary practices of a civilization or

of an era. It expresses an era just like a painting, a sonnet, a monument, a

theatre play or an architectural work.” (Michel Onfray)

Along with the daily eating habits or the occasional celebrating ones, household food

related items interpret and explain the lifestyle of a community (over time every era has

brought new elements), becoming a mark of cultural identity.

The Agricultural Museum has a collection of culinary items, handmade or industrial

products, coming from various social backgrounds and having different functionalities in the

cooking and food serving process: wooden food vessels (kneading-trough for the dough,

wooden pails or buckets for keeping everyday water or for the holy water, pots for food

transport, etc), ceramic pots (bowls for „sarmale” -stuffed cabbage rolls, tureens, jugs), brass

dishes (frying pans, buckets, pots, big size bowls, kettles, „bragă”- millet beer pots),

enamelled or non-enamelled metal dishes (teapots, pans, strainers), porcelain dishes (plates,

mugs, cups), glass dishes ( glasses, bottles, plates), brass or cast iron mortar and pestle,

biscuits or nuts kernel grinders: (Duplex, Venus, Porkert Made in Czechoslovakia, Astoria,

Harras Germany, Non Plus Ultra F&R.F, Silwed Baby), corn grinders (Moravia Made in

Czechoslovakia, Perfection Paris, Standard Werk Bolinder’s Sweden, Ideal Bolinder’s

Stocholm), mills for pepper or sugar (Aroma, Flacăra), cast iron meat mincers (Vlăhiţa,

Super, Husqvarna, Reliance Made in Sweden), beetroot mincers (Alexander Obermeyer,

Sondra Made in Germany), fruit mincers, machine for kneading cheese, buttermilk churning

machine, ice cream machine maker Reliance Husqvarna Sweden etc.

There are also, machineries and equipments for food cooking: „ţest” (bell shaped

mobile oven), small tin ovens, cooking machine (Vesta, Primus, Petrol - Globus), cooking

stove Vlăhiţa, electric cookers.

The collection is complemented by several monographic cookbooks, written by great

ladies, housekeeping teachers educated across Europe (ex. „Cookbook For the Good

Housekeeper” by Mrs. Ecaterina Dr. S. Comşa, graduated student of „Dament-Stift”

Housekeeping Institute in Viena) but also newer publications (for example the series

„Romanian Cuisine Stories” by Radu Anton Roman etc.).

LOPATĂ DE PÂINE - din lemn de fag. Provenienţă: Cuca Măcăii, jud. Argeş. Dimensiuni: L - 100 cm, l - 37 cm. WOODEN BREAD SHOVEL – made of beech wood. Origin: Cuca Măcăii, Argeş county. Dimensions: length - 100 cm, width - 37 cm.

PANACOTĂ/ CHITAR, pentru dospit aluatul; din lemn de fag. Provenienţă: Oltina, jud. Constanţa. Dimensiuni: L - 172 cm, l - 26,5 cm. „PANACOTĂ/ CHITAR” ( wooden bread leavening trough) for the dough leavenig; made of beech wood. Origin: Oltina, Constanţa county. Dimensions: length - 172 cm, width - 26.5 cm.

PĂSCĂRIŢĂ - pentru dus pasca, de Paşti, la biserică; din lemn de brad (vasul), paltin (mânerele), frasin (cercurile): ornamentată prin pirogravare. Provenienţă: Cununschi, com. Brodina, jud. Suceava. Datare: sec. XX. Dimensiuni: H - 23 cm, D - 29 cm. “PĂSCĂRIŢĂ” (Easter Basket) - for taking the Easter Bread to the church; made of fir tree wood (the bowl), sycamore maple wood (the handles), ash wood (the rings); decorated by pyrography. Origin: Cununschi, Brodina village, Suceava county. Dated: twentieth century. Dimensions: height - 23 cm, diameter - 29 cm.

FORMĂ pentru copt pâine în formă de peşte; din tablă zincată. Provenienţă: Braşov, jud Braşov. Dimensiuni: L - 35 cm, l - 14,5 cm. MOLDING SHAPE VESSEL for baking bread in the shape of a fish; made of zinc coated tin. Origin:, Braşov Braşov county. Dimensions: length - 35 cm, width - 14.5 cm.

PISTORNIC/ pecetar, pentru imprimarea prescurilor pentru Sfânta Împărtăşanie (Euharistie); din lemn de tei. Provenienţă: Slobozia, jud. Ialomiţa. Dimensiuni: D - 12 cm, H - 2,5 cm. „PISTORNIC”/ stamper for marking the Communion ritual bread of the Lord’s Supper or the Holy Communion (Euharistie); made of linden tree wood. Origin: Slobozia, Ialomiţa county. Dimnsions: diameter - 12 cm, height - 2.5 cm.

FORMĂ („babă”) pentru copt „blidul” (pâine rituală preparată din aluat dulce); ceramică roşie, smălţuită. Provenienţă: Straja, jud. Suceava. Dimensiuni: H - 12 cm, Dg - 21 cm, Db - 14 cm. MOLDING SHAPE VESSEL („babă”) for baking „blidul” (Ritual Bread sweet pastry dough); made of red enamelled ceramic. Origin: Straja, Suceava county. Dimensions: height - 12 cm, upper diameter - 21 cm, base diameter - 14 cm.

COFĂ/”COFIŢĂ” pentru transportat aghiasma de la biserică, din lemn de brad (vasul) şi fag (mânerul), ornamentată prin pirogravare. Provenienţă: Straja, jud. Suceava. Datare: ¼ sec. XX. Dimensiuni: H - 30 cm, D - 20 cm. „COFĂ” (Wooden Water Keeping Pail)/”COFIŢĂ” for taking holy water from church, made of fir tree wood (the bowl) and beech wood (the handle), decorated by pyrography. Origin: Suceava county. Dated: first quarter of twentieth century. Dimensions: height - 30 cm, diameter - 20 cm.

PUTINĂ/”BUDAŞCĂ”, pentru păstrat afine, zmeură, pe perioada de iarnă; lemn de molid (vasul) şi alun (cercurile). Provenienţă: Cununschi, com. Brodina, jud. Suceava. Datare: ½ sec. XX. Dimensiuni: H - 34 cm, D - 29 cm. WOODEN CASK /”BUDAŞCĂ”, for keeping cranberries and raspberries during winter; made of spruce fir tree wood (the barrel) and hazelnut tree wood (the rings). Origin: Cununschi, Brodina village, Suceava county. Dated: first half of twentieth century. Dimensions: height - 34 cm, diameter - 29 cm.

MOJAR pentru pisat usturoi, din lemn de nuc (vasul) şi fag (pisălogul). Provenienţă: Capu Câmpului, jud. Suceava. Dimensiuni: H - 6,5 cm, D - 22,5 cm. MORTAR for crushing garlic; made of walnut tree wood ( the bowl) and beech wood (the pestle). Origin: Capu Câmpului, Suceava county. Dimensions: height - 6.5 cm, diameter - 22.5 cm.

PIEPTENE pentru cules afine, merişoare; din lemn de fag (fundul/”hreabina” şi coada/”rucica”) şi paltin (peretele/”ubrucicul”). Provenienţă: Cununschi, com. Brodina, jud. Suceava. Datare ½ sec. XX. FARFURIE - din cositor, ornamentată prin gravare. Pe spate, prezintă marcă de meşter. Provenienţă: Băicoi, jud. Prahova. Datare: sec. al XV-lea. Dimensiuni: Dg - 25 cm, Db - 15 cm, H - 2,5 cm. PLATE - made of tin, decorated by engraving. On the back there is the craftsman’s brand. Origin: Băicoi, Prahova county. Dated: fifteenth century. Dimensions: upper diameter - 25 cm, base diameter - 15 cm. Height - 2.5 cm.

RÂŞNIŢĂ pentru măcinat biscuiţi, mieji de nucă ” HARRAS HERMAN 57”. Provenienţă: Băicoi, jud. Prahova. Dimensiuni: L - 14 cm, l -7 cm, H - 24 cm. GRINDER for grinding biscuits and nut kernels ” HARRAS HERMAN 57”. Origin: Băicoi, Prahova county. Dimensions: length - 14 cm, width - 7 cm, height - 24 cm.

MAŞINĂ DE TOCAT carne şi legume „SUPER”. Provenienţă: Ciocile, jud Brăila. Dimensiuni: L - 27 cm; l - 10 cm; H - 31 cm. MINCER for meat and vegetables „SUPER”. Origin: Ciocile, Brăila county. Dimensions: length - 27 cm, width - 10 cm, height - 31 cm.

RÂŞNIŢĂ pentru măcinat cafea. Din alamă şi fier, ornamentată prin ştanţare. Datare: 1927. Provenienţă: Slobozia, jud. Ialomiţa. Dimensiuni: D - 6,5 cm; l - 32,4 cm; L mâner - 14 cm. GRINDER for coffee beans. Made of brass and iron, decorated by stamping. Dated: 1927. Origin: Slobozia, Ialomiţa county. Dimensions: diameter - 6.5 cm, width - 32.4 cm, handle legth - 14 cm.

SOBĂ/ MAŞINĂ DE GĂTIT „VESTA” - confecţionată din fontă, oţel, tablă emailată, cărămidă. Este prevăzută cu: focar, cenuşar, cuptor, bazin pentru încălzit apa. Poate fi încălzită cu combustibil solid, dar are şi arzător pentru racord la reţeaua de gaz metan. Pe peretele din spate are o plăcuţă metalică cu înscrisurile: „UZ. CIOCANUL NĂDRAG N. FABR. 16154 FABR. 1960 CONTROL VERIF. STAS NR. ...CALIT. I”. Dimensiuni: L - 122 cm, l - 69 cm, H - 77 cm.”VESTA” STOVE/COOKING MACHINE - made of cast iron, steel, enamelled tin, brick. It consists of: heated chamber, ashbox, furnace, basin for heating water. It can use solid fuel, but has also got a burner that can be connected to the gas network. On the back it has a marked plate: ’’CIOCANUL NADRAG FACTORY. SERIAL 16154. MADE IN 1960. QUALITY CONTROL STAS NO.... FIRST QUALITY”. Dimensions: length - 122 cm, width - 69 cm, height - 77 cm.

PRIMUS - maşină de gătit, cu combustibil lichid, confecţionată din fontă şi alamă. Pe rezervor, este gravată sigla firmei (o clădire cu furnal) şi înscrisul: „TRADE MARK PHOEBUS N° 2”. Pe căpăcelul de la rezervor, pe cheiţă şi pe grătar, inscrisul: „PHOEBUS”. Provenienţă: Slobozia, jud. Ialomiţa. Dimensiuni: H - 28 cm, D - 24 cm.

PRIMUS - cooking machine, using liquid fuel, made of cast iron and brass. On the tank it is marked the manufacturer logo (a furnace building) and the words: „TRADE MARK PHOEBUS N° 2”. On the tank top cover , on the key an don the grate, there is a mark : „PHOEBUS” Origin: Slobozia, Ialomiţa county. Dimensions: height - 28 cm, diameter - 24 cm.
